BACON WRAPPED YUMMY APPS
Brine alligator and wrap in bacon on skewers for a tasty appetizer. Throw in the smoker for extra flavor. You can use chicken instead of alligator.
SMOKED ALLIGATOR
Alligator pieces
Equal parts kosher salt/brown sugar
1/3 cup pickle juice
Water
Onion slices
Mix together ingredients in bowl and marinate overnight.

Skewers
Place ingredients on skewers and wrap with bacon. Place in smoker at 250 degrees for 3 hours.

SMOKED JALAPENO POPPERS
Jalapenos, seeded and halved
1 package cream cheese
1 cup shredded cheese
Bacon slices
Mix together cheese until combined. Scoop into jalapeno halves and wrap with bacon. Smoke for 3 hours at 240-250 degrees.
